Okay, I probably need to bust out my big camera for better food photos but you get the gist! I had so many of you reach out about sharing my recipes, and y’all begged for this soup last week so here it is.
- 1 lb. cubed beef
- 1 cup of diced yellow onion
- 3/4 a box of beef broth
- 4 russet potatoes cubed
- 4 carrots peeled and diced
- 3 tbs of beef base ( I use the powder kind)
- 5 cups of water
- 1 can of corn
- 1 can of mixed vegetables
- 1 can of tomato paste ( or 2 small cans)
- 2.5 tbs of minced garlic
- 10 brussel sprouts quartered
- 1 can of crushed tomatoes ( drained)
- 2 bay leaves
- 1 tbs worcestershire sauce ( can anyone actually pronounce that-ha)
- 2tbs steak seasoning
- salt & pepper to taste
- croutons for garnish*
- Crockpot on low for 6-8 hours
- Brown the beef in a skillet till all sides are browned and slightly crusted.
- transfer beef to crockpot and add remaining ingredients
- *pro tip..aka aryn tip: if using a powdered beef base like I do, heat the 5 cups of water in the microwave for 1.5 mins then mix in the powder before adding to crock pot.
- About an hour before its done I taste test and see whatever spices need to be added.
- serve with your choice of toppings, we usually do croutons and or shredded cheese.
This makes a ton of soup obviously, so its great to make at the beginning of the week for hungry kids and husbands to grab till Friday.
