Needing something light and easy for a last minute dinner? These shrimp tacos are a favorite at our house, and take less than 15 mins to whip up!
INGREDIENTS
- Street Taco Tortillas
- Avocado
- 1 Cup of Pineapple ( some times we do mango)
- 1 lb Raw Shrimp
- Olive Oil
- 1/2 Bag Organic Power Mix Slaw
- 1 tbs Trader Joes Chili Lime Seasoning
- Red Onion Diced
- Sour Cream
- 1/2 tbs Minced Garlic
- Lime Juice
- 1/2 tbs Ranch Dressing
- Blue Top Buffalo Cayenne Sauce** This is key**
INSTRUCTIONS
- Drizzle olive oil in a sauté pan on medium heat.
- Add your garlic.
- Add in shrimp followed by your chili lime seasoning. If you like spicy..add a few dashes of chili powder!
- Cook shrimp through until they turn pink in color.
- While the shrimp cooks I usually dice up my red onion and pineapple.
- In a bowl add your ranch dressing and a few squeezes of lime juice to your 1/2 a bag of slaw. Mix until well combined.
- Heat tortillas via your desired method. To be honest I usually just pop them in the microwave for a hot second.
- Assemble your tacos & Enjoy!
Taco Tip- I aways do a small strip or dollop of sour cream on the base of the taco to help the slaw stay put!
