SO many of you had requested the recipe for the ramen bowl I shared last week on Instagram, so I put it down on virtual paper today! It is a super simple dish and the ramen packets are sold in most grocery stores ( and online).
INGREDIENTS
- Lotus Foods Ramen– love them all but for this I used Millet & Brown Rice Ramen.
- Cherry Tomatoes
- Broccoli
- Carrots
- Green Onion
- Egg
- Sriracha
- Pink Salt & Pepper
- Olive Oil
- White Vinegar
- Lemon Juice
INSTRUCTIONS
- Preheat oven to 425
- Slice carrots lengthwise and cut off the ends.
- Line a baking sheet with foil and arrange the carrots and broccoli so they are not touching.
- Drizzle with olive oil ( or oil of choice) then salt, pepper, and season to taste. ** Use whatever other seasoning you’d like..I prefer garlic powders, good on everything seasoning, steak seasoning..etc.**
- Before putting the pan in I always add a little lemon juice to my broccoli.
- Bake for 15-20 mins until tender then add the cherry tomatoes for another 5-10 mins to roast.
- While your veggies are roasting I prepare the Lotus Foods Ramen per the package instructions. SUPER EASY and pretty quick to make! Once its done set it aside in whatever vessel you plan to serve it in so it can cool a bit and thicken up.
- I usually poach my egg while the Ramen is cooling, and this is where the white vinegar comes in. I always add a little bit ( say 2 tbs or so ) to the water before gently releasing my egg into the simmering water. ** I use a small ramekin to release my egg into the water, and a slotted spoon to remove it.**
- To assemble the dish I layer my veggies on top, add my poached egg, and top with some chopped green onion. Adding a few swipes of Sriracha to your poached egg gives the dish just enough heat!
